Like Japan, Peru has a millennia-old history. They are two great, ancient civilizations with two major culinary traditions. These traditions complemented one another, and neither of the two sides absorbed the other to the point where one disappeared. Susher a menu is the result of this great fusion and the experience/vision of Mauricio Fraga-Rosenfeld and his dedicated culinary team lead by Peruvian Executive Chef Javier Angeles-Beron.
