Dinner at the Chef’s Table: Rustic Summer

Simplicity and freshness are the keys to rustic Italian dining, which is based on centuries-old recipes that still hold up to modern palates. Via Umbria has created a fresh and amazingly delicious menu of simple summer classics that will prove that sometimes the original way is, in fact, the best. You will be joined at every course for a description of each dish, so feel free to ask questions.

Primo – ORECCHIETTE CON POMODORINI E COZZE (Orecchiette with Mussels, Tomatoes, Basil and Italian Peppers)

Secondo – SCALPPINA DI VITELLO (Veal Scallopini with Lemon, Capers, Saffron Sauteed Local Heirloom Beans with Almonds)

Dolce – FICHI IN CAMICI (Orange Blossom Honey Poached Figs with Vanilla Bean Gelato and Jam Cookies)

For the Dinner at the Chef’s Table series, Via Umbria serves a single fixed menu each night (with a vegetarian offering possible with advance request) and have one seating at 7 pm. All guests sit communally at one table. Each course is served at the same time and our Chef will join you at every course to describe what has been prepared and to answer any questions you may have. Every seat is a seat at the chef’s table.
