Dinner at the Chef’s Table: September in Central Italy

Join Via Umbria and enjoy the delicacies of Central Italy with a menu that pays tribute to these special flavors that are present in September. This menu celebrates food from the natural center of Italy, a mix that yields sweet delicacies from the sea with the finest meats and freshest produce from the land. The Prosciutto Toscano, Pecorino Toscano and Lobster all represent Tuscany while the Handmade Cappelletti pays homage to the gastronomical powerhouse of Emilia-Romgana, with all the dishes creating splendor for everyone involved! You will be joined at every course for a description of each dish–feel free to ask questions.

Primo – CAPPELLETTI CON VITELLO TARTUFATO (Handmade Cappelletti with Truffled Veal in a Brown Butter Sauce)

Secondo – ARAGOSTA ARROSTITA (Roasted Half Lobster with Charred Late Season Creamy Corn Polenta “Sformato” and End of Season Tomatoes in Herb Butter)

Dolce – CROSTATA DI MORA E RICOTTA (Blackberry and Ricotta Pie with Toasted Pignoli and Cream)

For the Dinner at the Chef’s Table series, Via Umbria serves a single fixed menu each night (with a vegetarian offering possible with advance request) and have one seating at 7 pm. All guests sit communally at one table. Each course is served at the same time and our Chef will join you at every course to describe what has been prepared and to answer any questions you may have. Every seat is a seat at the chef’s table.
